Are you wondering “where’s the beef?” We eat a lot of poultry and fish but there are lean cuts of beef that are also suitable on your lean eating program. Top cuts are generally the best since they are a great source of protein without the excess fat.
Grades of beef include:
- Prime – greatest amount of marbling/fat making it the most juicy and therefore most flavorful by most standards. Often found in specialty markets and expensive restaurants.
- Choice – this is most readily available in local markets and contains a little less marbling than prime. Still considered a flavorful choice by most.
- Select – leanest cuts with the least amount of marbling as compared to the other grades.
If you are going to eat beef on occasion, why not go with the good stuff? Go for “Choice”.
