Hi family,
I’m a little late this week. Grand-baby came by for a visit and the schedule went out the window. Eighteen months and oh so cute! She’s so curious and into everything. You just don’t want to miss a minute!
Well, on to Sunday Brunch. I’ll give you one guess as to what we had for breakfast this week. Remember those salmon spaghetti squash boats? You got it! The leftover salmon went into an awesome egg scramble for Sunday breakfast!
On Sundays, I typically gather up some leftover protein and then whip it up with egg whites/eggs, veggies, whatever I can get my hands on, and make some sort of egg dish. It could be an egg scramble, an omelet or frittata depending on my mood.
Things can get pretty interesting and I can get mighty creative depending on what’s in the fridge. But this week, pickings were a little slim as I had not gone to the grocery store yet.
We were hungry and on a mission to get the grocery shopping done early and that bowl of salmon just spoke to me, begging to go into the weekend egg scramble, so I just had to do it!
I try to make it a little (just a little, who has time for that) bit more special on Sunday since the week day breakfast is usually simple and often the same every day. I know, Boring, right?! Sometimes that’s easier, but no one said we couldn’t have variety.
Anyway, here’s Hubby’s plate.
We had the salmon scramble with plantain chips, half of a sweet potato (we were hungry), some fresh cut tomatoes and a bowl of fruit (grapes, pineapple and oranges). We also had herbal lemon tea and water with a few splashes of cranberry and orange juice.
I’m thinking I should take more pictures of my plate as my servings are a bit smaller than my Husband’s. His plate just usually looks a little bit more appetizing! As for me, I just want to get it on the plate and get it done. But for reference, I usually eat maybe just shy of ½ of his serving size.
Yeah, yeah,I know food photography is not my forte. We’ll see how this goes if meals continue to be front and center, then I will just have to get better at it, right? Besides, sometimes when you have to get down and dirty to lose weight, every meal ain’t gonna be pretty. Should they be visually appealing? Why of course! But reality is, some days it’s just not happening and we need to Eat. Just saying.
But you get the idea. I just want you all to appreciate the foods and types of meals we are eating. Just so we are clear, this is NOT how I would diet for a competition, at least not for the entire time.
Right now I am working on eating a fairly clean and healthy diet with a focus on lean proteins, fibrous veggies and low glycemic carbs with only modest exceptions if any. No added sugars, no dairy. And of course, moderation is key.
